- 600-700 grams salmon fillet
- 1 –2 tablespoons olive oil divided
- Salt and black pepper to taste
- 2 cups fresh spinach
- ½ teaspoon paprika
- 150 grams feta cheese crumbled
- 25 grams shredded parmesan
- 50 grams jarred bell pepper chopped (optional)
Preheat your oven to 400°F (200°C).
Place the salmon in a baking dish. Using a knife, gently make a few shallow cuts across the top of the fillet (this helps the topping settle into the fish and cook evenly).
Drizzle the salmon with olive oil and season with salt and black pepper.
In a pan over medium heat, add a little olive oil and sauté the spinach for about 2 minutes, just until wilted. Sprinkle with paprika and stir.
