Ingredients
  

  • 2 medium boiled beets peeled and cubed
  • 2 cups romaine lettuce chopped
  • 50 grams feta cheese crumbled
  • ¼ small red onion thinly sliced
  • 2 tablespoons walnuts toasted
  • 1 tablespoon extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Chop the romaine lettuce and place it in a large salad bowl.
  • Add the cubed boiled beets over the lettuce.
  • Sprinkle the crumbled feta cheese evenly across the salad.
  • Add the thinly sliced red onion if using.
  • Toast the walnuts in a dry pan for 2–3 minutes until fragrant, then sprinkle them on top of the salad.
  • Drizzle with olive oil and season with salt and freshly ground black pepper.
  • Toss gently or serve layered for a beautiful presentation.
