These cottage cheese oat pancakes are a protein-rich and wholesome breakfast made with simple ingredients. Ingredients
  

  • 250 grams pressed cottage cheese
  • 2 large eggs
  • 120 grams oat flour plus extra for coating
  • 5 grams baking powder 1 teaspoon
  • 30 ml maple syrup
  • 1 gramm salt pinch
  • 5 –10 ml oil or butter for cooking

Instructions
 

  • In a large bowl, combine the pressed cottage cheese and eggs. Mix well with a fork or spoon until evenly combined.
  • Add the oat flour, baking powder, salt, and maple syrup.
  • Stir until a thick batter forms. Let it rest for 5–10 minutes so the oat flour can absorb moisture.
  • Lightly sprinkle a small amount of oat flour onto a plate.
  • Using your hands, divide the batter into 9 portions and gently shape each into a small pancake.
  • Lightly coat each pancake in oat flour, flipping once so both sides are covered.
  • Heat a non-stick pan over medium-low heat and add a small amount of oil or butter.
  • Place the pancakes in the pan and cook for 3–4 minutes on the first side until golden.
  • Flip carefully and cook another 2–3 minutes until the pancakes are cooked through and lightly browned.
