- ½ cup whole wheat flour
- ½ teaspoon baking soda
- 1 egg
- ⅓ cup maple syrup or honey
- ⅓ cup avocado oil or melted coconut oil
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: 1 teaspoon cinnamon
- Optional: ¼ cup dark chocolate chips or chopped nuts
Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
In a bowl, mix the oats, flour, cinnamon, baking soda, and salt.
In another bowl, whisk the egg, maple syrup, oil, and vanilla until smooth.
Pour the wet ingredients into the dry ingredients and mix until well combined.
If using chocolate chips or nuts, gently fold them into the dough.
Let the dough rest for 5 minutes so the oats can absorb some moisture.
Scoop about 1½ tablespoons of dough per cookie and place on the tray.
Gently flatten each cookie with the back of a spoon.
Bake for 10–12 minutes, until edges are set but centers are still soft.
Let cool on the tray for 5 minutes, then transfer to a rack to cool completely.
