- 1 large ripe peach
- ¾ cup plain Greek yogurt
- 2 teaspoons honey plus more for serving
- 6-8 fresh mint leaves finely sliced
- 1-2 tablespoons chopped pistachios
- 1 tablespoon fresh lemon juice
- 1 teaspoon butter or olive oil for the pan
Cut the peach into thick wedges, leaving the skin on.
Heat a skillet over medium-high heat and add the butter or olive oil.
Place the peach wedges cut-side down in the hot skillet.
Cook for 2–3 minutes without moving them, until caramelized and golden.
Flip, add 1 teaspoon of honey and cook for about 1 minute more.
In a bowl, combine the Greek yogurt, 1 teaspoon of honey, and lemon juice.
Spoon the yogurt onto a serving bowl or plate.
Arrange the warm peaches over the yogurt.
Sprinkle with fresh mint and chopped pistachios.
Finish with a small drizzle of honey (if desired) and serve.
