Salmon Quinoa Bowl Recipe

Ingredients
  

For the Salmon

  • 2 salmon fillets about 120–150 grams each
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Optional: garlic powder or paprika

For the Yogurt Herb Sauce

  • ¾ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 small garlic clove minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped dill
  • Salt and pepper to taste

For the Bowl

  • Cooked quinoa
  • Cucumber slices
  • Cherry tomatoes
  • Extra herbs for garnish

Instructions
 

  • Bake the salmon: Preheat oven to 200°C (400°F). Place salmon on a lined tray, brush with olive oil, season with salt, pepper, and optional spices. Bake for 12–15 minutes until flaky.
  • Make the yogurt herb sauce: In a bowl, mix Greek yogurt, lemon juice, garlic, chopped herbs, salt, and pepper until smooth.
  • Assemble the bowl: Add quinoa at the bottom of each bowl. Add the flaked salmon, cucumber, and tomatoes. Spoon the yogurt herb sauce over the top.
  • Garnish and serve: Sprinkle with extra herbs and enjoy immediately or pack for later.
